I try hard to limit the amount of meat my family eats and am always looking for ways to include more vegetarian options in our diet. I am always aware, however, that my growing kids need a fair amount of protein to stay healthy and strong. Since they are not big fans of beans or tofu, this often leaves me in a bit of a bind when it comes to protein rich meals! Breakfast for dinner is always a huge hit with the kids and when I was asked to come up with a creative recipe for Silk Fruit&Protein I thought that French toast for dinner would be a quick and easy meal idea!
First things first, I needed to come up with a sauce idea for my Tropical French Toast inspiration. Since nothing screams ‘tropical’ to me more than pineapple I figured that would be a good choice. I found a recipe I liked and jotted down all the ingredients I would need on my next trip to Walmart. Once the list was made I grabbed my bags, list and coupons and headed out to shop.
I found all 3 varieties of Silk Fruit&Protein at my local Walmart: Mango Peach, Mixed Berry, and Strawberry Banana. They were not in the juice section which I though they would be but in the dairy section with the other Silk milk varieties.
I bought all the other ingredients I needed for my recipe and a few items I had coupons for and headed off to pay for my groceries. After a rather unpleasant checkout experience I headed home to start working on dinner. Walmart isn’t always the easiest place to shop, unfortunately, although they have a decent selection and fairly good prices.
First thing I needed to do was make the Pineapple Sauce. This was simple to mix together and then it just simmered on the stove while I moved on to my Tropical French Toast. You can see the recipe below for all the ingredients.
Next, I sliced up the bread and made the Tropical French Toast batter. I mixed eggs and Silk Fruit&Protein Mango Peach along with a little bit of vanilla and soaked each piece of bread in it.
Since my daughter absolutely loves the Silk Fruit&Protein Mango Peach she wanted a glass of it straight up to go with her dinner. I was certainly not going to say no to such a healthy request so she poured herself a nice big glass!
We love French Toast and putting a bit of a tropical spin on it with Silk Fruit&Protein made for a happy family! Here is the recipe if you want to try it yourself!
1 loaf of French bread cut into slices
2 cups Silk Fruit&Protein ( Mango Peach flavor)
2 tsp vanilla
butter for frying
1 tablespoon brown sugar
2 teaspoons cornstarch
1 (20 ounce) can crushed pineapple, undrained
1/4 cup orange marmalade
1. In a shallow baking dish whisk the eggs, Silk Fruit&Protein, and vanilla until well blended.
2. Heat a frying pan or griddle on medium and add tablespoon or so of butter
3. Soak slices of bread in the egg mixture and place in preheated frying pan
4. Fry until golden and flip. Fry other side until golden as well.
5. Keep French toast warm in oven until all slices are cooked
6. While bread is frying, add the sugar, cornstarch, pineapple and marmalade to a small sauce pan and mix until blended; bring to a boil. Reduce heat; cook and stir for 2 minutes or until thickened.
7. Arrange French Toast on a plate, sprinkle with coconut and top with sauce.
