Many years ago, when I first moved out into my own apartment, my older sister sent me a few simple hand written recipes that she thought I could handle making on my own. I guess she was worried that I would starve to death without my mom around to cook for me. This was one of the recipes she sent me. Over the years I have played with it…adding spices and substituting one thing for another and this is the end result. A creamy, cheesy chicken and vegetable creation that is served over rice. Easy, delicious and something my whole family loves. So, a huge thank you to Ellen at Confessions of an Overworked Mom for ensuring that her little sister didn’t starve to death on the road to adulthood!
Creamy, Cheesy Chicken and Vegetables over Rice
- 2 chicken breasts, cut into bit sized pieces
- ½ onion, chopped
- 2 cloves garlic, minced
- 2 TBSP olive oil
- 1 (9 ounce) package of frozen vegetables
- 1 tsp Tarragon
- 4 ounces shredded cheddar cheese
- ½ cup lowfat yogurt
- ¼ cup ranch dressing
- salt and pepper to taste
- 4 cups cooked rice
- Heat olive oil in a large saute pan
- Add chopped onion and saute for 3 to 4 minutes
- Add chicken and garlic and cook until chicken is almost done
- Add frozen vegetables to pan and cook until vegetables are hot
- Season with salt, pepper and tarragon
- Add cheese, yogurt and ranch dressing and stir over medium heat until melted and creamy
- Serve over cooked rice
