My husband and I are trying to reduce the amount of meat our family eats and have started participating in the Meatless Monday movement to find new recipes. Reducing your meat consumption is good for the environment, your health AND your wallet! While I find it relatively easy to find vegetarian meals, most use an awful lot of cheese.
