Once every couple of months I head to Dekalb Farmer’s Market and stock up on their fresh seafood. Having grown up in New England, there are very few varieties of seafood that I don’t like. I have not been impressed with the seafood selection at most of my local grocery stores so when I go to the farmer’s market I by tons and put it in the freezer. This particular market has incredibly fresh fish and many varieties are still swimming around in tanks! Tilapia is a firm white fish with a very mild flavor. It is the perfect fish to use when you want to highlight the other flavors in the meal and don’t want your dish turning out too ‘fishy’. Thankfully, tilapia is also a relatively inexpensive fish so we use it fairly often. If you are trying to reduce your carbon footprint and want to buy ‘greener’ food choices, tilapia that is farm raised in the US is one of the better seafood choices you can make. This tilapia recipe is really very simple to make and served with a baked potato or rice you have a complete meal with very little work.

A quick and easy seafood recipe

Prep Time 15 minutes
Cook Time 5 minutes
Total Time 20 minutes

Ingredients

  • 1 cup walnuts
  • 1/2 cup Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic salt
  • Freshly ground black pepper to taste
  • 4 tilapia fillets
  • 1 egg, slightly beaten with 3 TBSP water
  • 3 tablespoons olive oil
  • 6 cups mixed baby greens
  • 2 carrots, shredded
  • 1/4 cup dried cranberries

Instructions

  1. In a food processor, combine walnuts, oregano, thyme, and garlic salt. Process until finely chopped and transfer to a shallow dish.
  2. Beat the egg with the water in a small bowl. Coat each tilapia fillet with the egg mixture and then dredge in the walnut mixture. Press the mixture into both sides of your fish fillet.
  3. Heat 3 TBSP of oil in a large skillet over medium heat. Add the tilapia and cook 2 to 3 minutes per side, until fork-tender and golden brown on each side.
  4. To serve: On a plate, add 1 1/2 cups of the mixed baby greens, approximately 1/4 cup shredded carrot, and a sprinkling of dried cranberries. Toss gently to mix. Top with one tilapia fillet right before serving.
