Avocado and Greek Yogurt Dip Recipe

Growing up in suburban Connecticut I never once saw an avocado.  I don’t think I could even tell you as a child what one looked like.  We ate rather traditional New England food and while I love baked beans and pot roast, there was very little international cuisine on the menu.  Fast forward to life after college and I am down in Houston, Tx getting overwhelmed with new foods and flavors!  It was an amazing food scene and it definitely opened my mind to new food possibilities.

Over the last couple of years I have become obsessed with guacamole.  The creamy texture and bold flavor is quite addicting.  Of course, it is also rather high in fat so I try to limit how much I eat.  When I got asked to create a recipe with Stonyfield Farms Greek yogurt that would pair well with Late July chips I hit upon a solution to my guac guilt.  Adding thick and creamy Greek yogurt to my favorite dip would cut the fat and give me twice as much guacamole flavor with half the guilt!

Ingredients
  • ½ cup Stonyfield Farms plain Greek yogurt
  • 1 avocado, pitted and scooped from shell
  • 2 to 3 cloves garlic
  • 1 jalalpeno pepper, seeded and chopped
  • ½ small tomato, seeded and chopped
  • 3 TBSP fresh parsley
  • 3 TBSP fresh cilantro
  • juice from ½ lime
  • pinch of salt, to taste
Instructions
  1. Place all ingredients in a food processor and pulse until well blended
  2. Scoop into bowl and eat with your favorite chips or vegetables
