Black Beans and Rice with Sausage Recipe

I buy my sausage from a small. local farmer and the flavor is downright amazing. It is not particularly cheap so I try to find ways to include it in sausage recipes where it is merely a small part of the total recipe. Cutting back on meat consumption is easier if you substitute some of the meat with beans instead like in this black beans and rice with sausage. This  also works well in assorted Mexican dishes like tacos, burritos, etc.

I usually use organic black beans in a can because I am rather lazy and hate having to cook the beans ahead of time. If you are feeling ambitious and have a bit of free time, cooking dried beans is much cheaper than buying them in cans.

Because I am a firm believer that everything tastes better with cheese on it,  I added some sharp cheddar cheese to these black beans and rice (try my black bean quesadillas with cheddar cheese for another great black bean recipe!). And now that I have fresh cilantro growing in my garden I added plenty of that to my sausage recipe as well. You can adjust the flavors of this dish to suit your own personal tastes.

Ingredients

  • 5 cups white rice, cooked according to package directions
  • 1 15 ounce can black beans
  • 1/2 pound bulk ground sausage
  • 2 Tbsp olive oil
  • 1/2 large onion, chopped
  • 3 cloves garlic, minced
  • 1 jalapeno, seeded and finely chopped
  • 1 can finely diced tomatoes, undrained
  • salt and black pepper to taste
  • 1 TBSP of Cajun or Creole seasoning
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup shredded cheddar cheese

Instructions

  1. In a large saute pan, heat olive oil over medium heat
  2. Add ground sausage and cook until almost done
  3. Drain sausage
  4. In the same pan, combine onion, sausage, black beans, garlic, jalapeno and tomatoes. Cook 3 to 4 minutes
  5. Add in the rice and mix until combined. Salt and pepper to taste
  6. To serve, plate desired amount and top with cilantro and cheddar
