Eating seasonally is a great way to reduce your carbon footprint but in the middle of winter, it is often hard to know what to eat. Cold weather is the perfect time for homemade soups and seasonal produce such as squash and root vegetables. Chunky butternut squash soup is not only delicious, but is also an eco-friendly alternative to the traditional chicken noodle soup option as it uses seasonally grown veggies! I love this. I make it also by pureeing the squash in chicken broth with just a little meat like sausage or bacon. Very little and lots of onion and garlic. I am now a squash lover.
