How many times a day do moms hear the words “I’m hungry” from their kids? If I had a dollar for ever time I heard that I would be a very rich woman lounging on a beach somewhere very secluded! Kids are hungry about 472 times a day. And if left to their own devices, mine would probably eat their weight in cheese crackers or cookies and never branch out to another food group. I love when I find a kid friendly recipe that is both easy and quick….and if I can find one that is healthy, too, I am even happier! When I was asked to work with Monk Fruit In The Raw on this project I was ecstatic to come across these Chicken and Fruit Kabobs with Peach Dipping Sauce (if you love kid friendly recipes, check out my recipe for silver turtles in the oven!). Food on a stick is always a big hit and the lightly sweet dipping sauce makes it both fun and flavorful!

What is Monk Fruit In The Raw? It is a zero calorie sweetener that tastes like sugar but actually comes from vine ripened monk fruit. It was originally harvested in the 13 century and is available as a bulk product for baking or in individual packets for sweetening your coffee or tea. In this peach dipping sauce recipe I could not even tell that I didn’t use real sugar in it (check out this easy  peach chutney if you love fresh peaches!) Quite often I find that sugar substitutes have a bit of an ‘off’ flavor however the Monk Fruit In The Raw sweetened this dip deliciously with no odd flavors and significantly fewer calories than if I were to use regular sugar.

There are no hard conversions to make when you are baking either. Monk Fruit In The Raw is used just like you would use real sugar. If your recipe calls for 1/2 cup of sugar, just replace that with 1/2 cup of Monk Fruit In The Raw instead! It is a great way to cut down on the calories you are serving to your kids without forcing them to skip the sweets all together.

Easy Kid Friendly Recipe Peach Dipping Sauce

Kid friendly food on a stick. Healthy chicken and fruit with a delicious peach dipping sauce

Prep Time 15 minutes

Ingredients

  • 1/2 Gala or Braeburn apple, cored
  • 12 1-inch cubes roasted chicken breast, about 6 ounces
  • 16 seedless green grapes, about 1/2 pound
  • 12 1-inch cubes cantaloupe melon (1 1/4 cups)
  • 8 8-inch bamboo skewers
  • Sauce
  • 1 (10-ounce) bag frozen sliced peaches, defrosted and chopped
  • 1 cup orange juice
  • 1/4 -1/3 cup Monk Fruit In The Raw Bakers Bag®
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 1/2 teaspoon vanilla extract

Instructions

  1. Cut the apple into 4 wedges. Cut each wedge crosswise into 4 pieces.
  2. For the kebabs, thread 3 chicken cubes, 4 grapes, 4 apple pieces, and 3 melon cubes
  3. onto each skewer, alternating the order.
  4. For the dipping sauce, simmer the peaches and orange juice in a small saucepan over
  5. medium-high heat until the peaches are soft, 8 minutes. Let them sit 5 minutes to cool
  6. slightly. Transfer the peaches and liquid to a blender and whirl to a puree. Return the
  7. pureed fruit to the pan. Add the Monk Fruit In The Raw®. In a small bowl, mix together
  8. the cornstarch and water until combined. Add the cornstarch mixture to the pot and return
  9. the pot to medium heat. Stirring constantly with a wooden spoon, cook until the sauce
  10. becomes less cloudy and coats the spoon, 6 minutes. Mix in the vanilla. Pour the sauce
  11. into a bowl and cool to room temperature before serving. Or, cover the bowl with plastic
  12. wrap and refrigerate for up to 5 days. The sauce will get thicker when chilled. Makes 1
  13. /2 cups.
