Easy Pasta Recipe: Fettuccine with Grilled Chicken in a Tomato Cream Sauce

The holidays are a chaotic time of year and after 2 weeks of company I have learned a new appreciation for people who have to cook for a large family on a regular basis. I never realized how hard it was to feed a crowd but this easy pasta recipe was a big hit and can be scaled up or down, depending on how many people you are feeding. Pasta is filling and much of this meal can be made up ahead of time so that dinner can be put on the table without too much chaos at 5 PM when the kids are getting cranky. Make up a large salad earlier in the day and grill the chicken ahead of time if needed. With only 30 minutes of work, this easy pasta recipe will be a big hit!

My easy pasta recipe may not create quite as much excitement as Meg Ryan’s did but it was a big hit with my family and is an easy meal to create when you have a house full of guests or are pressed for time (and if you love pasta, check out my spaghetti pizza recipe!). Rushing to holiday band concerts, wrapping gifts for teachers and just generally surviving the holiday chaos without going completely crazy means finding easy, healthy and quick meals like the one below.

Fettuccine with Grilled Chicken in a Tomato Cream Sauce

This easy pasta recipe will feed a crowd with very little work!

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 2 pounds fettuccini
  • 6 chicken breast
  • 2 cups Italian dressing
  • 2 cans Contadina tomato sauce (15 ounces each)
  • 1 cup heavy cream
  • 1 1/2 cup shredded Parmesan cheese (divided)
  • 2 TBSP olive oil
  • 2 TBSP butter
  • 6 cloves garlic, minced
  • 1 small onion, chopped
  • 1 TBSP dried oregano
  • 1 tsp garlic salt
  • 1/2 tsp black pepper
  • fresh basil (optional) for serving

Instructions

  1. Marinate chicken in Italian dressing for 1 hour.
  2. Grill chicken over medium heat (350 degrees) until done, approximately 10 minutes on each side or until no longer pink and juices run clear.
  3. In a large pot of salted water, cook pasta according to package directions
  4. In a medium sauce pan heat olive oil and butter and saute onion and garlic 3 to 3 minutes.
  5. Add in the Contadina tomato sauce, garlic salt, pepper, and oregano. Simmer 20 minutes.
  6. Just before serving add 1 cup heavy cream and 1 cup Parmesan cheese. Stir until combined and cheese is melted
  7. To serve: Drain pasta and return to pot. Pour in tomato cream sauce. Stir to combine. Place pasta on dish with sliced grilled chicken on top. Sprinkle with fresh basil if desired.
