Great Meatless Monday fritatta recipe that is full of flavor!
Ingredients
1 onion, chopped
2 TBSP olive oil
2 small zucchini, sliced thin
12 eggs, scrambled with 1/4 cup water
1/4 cup Wholly Salsa
1/3 cup crushed tortilla chips
1 cup shredded cheddar
2 green onions, chopped
sour cream, Wholly Guacamole, and extra salsa for topping
Instructions
In a large cast iron pan, heat the olive oil and saute the onion and zucchini for 3 to 4 minutes
In a large bowl, scramble the eggs with the 1/4 cup of water and the salsa
Add the tortilla chips to the frying pan and pour in the egg mixture
Sprinkle the cheddar cheese on top
Bake 20 minutes at 350 degrees
Remove from oven and slice into pieces. Top each piece with sour cream, salsa and green onions. Place a dollop of Wholly Guacamole on the plate and serve!
