I am always trying to find easy, quick, meatless meals that everyone in the family will eat. Eggs are one of our favorite non meat proteins but there are only so many ways you can serve them over the course of the month. This Southwestern Frittata recipe from chef Alex Thomopolous was incredibly easy to make and only took 30 minutes. If you like southwestern flavors like salsa and guacamole, this frittata recipe will be perfect for you!

Great Meatless Monday fritatta recipe that is full of flavor!

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 1 onion, chopped
  • 2 TBSP olive oil
  • 2 small zucchini, sliced thin
  • 12 eggs, scrambled with 1/4 cup water
  • 1/4 cup Wholly Salsa
  • 1/3 cup crushed tortilla chips
  • 1 cup shredded cheddar
  • 2 green onions, chopped
  • sour cream, Wholly Guacamole, and extra salsa for topping

Instructions

  1. In a large cast iron pan, heat the olive oil and saute the onion and zucchini for 3 to 4 minutes
  2. In a large bowl, scramble the eggs with the 1/4 cup of water and the salsa
  3. Add the tortilla chips to the frying pan and pour in the egg mixture
  4. Sprinkle the cheddar cheese on top
  5. Bake 20 minutes at 350 degrees
  6. Remove from oven and slice into pieces. Top each piece with sour cream, salsa and green onions. Place a dollop of Wholly Guacamole on the plate and serve!

Basically, it is a food TV type show that is YouTube based. There are not only recipe creation demos but also some meet the chef videos, question and answer sessions and other behind the scenes stuff. I am a huge fan of Wholly Guacamole and Wholly Salsa and I have showcased these products a number of times over the last year on my blog. What I really love about them is that they are completely natural. There is NOTHING artificial in them and the preserving process leaves them with tons of fresh flavor. There are also tons of different varieties to appeal to a wide range of taste buds. While I love the sweet/spicy flavor of the Mango Salsa, my husband is a traditionalist and prefers the regular variety…and the spicier the better!   4. I like the Halloween Goodies. It looks like there are two videos… I like the one with ghost emerging from cauldron/monster faces.
