We are a household of serious breakfast eaters. Well, except my husband who seems to think that coffee is an acceptable breakfast all by itself. The rest of us, however, usually sit down to a very substantial breakfast that includes just about every food group in fairly large quantities. Eating a big breakfast is actually supposed to be a great way to help maintain a healthy weight. Every hear the phrase “Eat breakfast like a king, lunch like a prince, and dinner like a pauper”? The majority of your nutrition and calories should come from a big, healthy breakfast! My children’s favorite breakfast (or lunch, or dinner!) is something called a Kaiserschmarrn. I got this breakfast recipe from a German girl I used to work with many years ago (it is one of our favorites, along with my homemade kolaches!). Traditionally, Kaisershmarrn are made with raisins in them, cut into strips and sprinkled with powdered sugar. We have played around with the recipe for years until we have created a breakfast recipe that is both simple to make and elegant to serve. And the most important ingredient is a large number of eggs!

Egglands Best Eggs for an easy Breakfast Recipe

Kaiserschmarrn are sortof a cross between a crepe and a pancake. It is a sweet, eggy batter that is fried in butter, filled with jam, rolled and sprinkled with powdered sugar. I have made them with apple jelly and cinnamon, peach jam and powdered sugar, or this new classic:  Chocolate sauce and raspberries. No matter how you choose to serve them, make sure you choose the right eggs! I love Eggland’s Best because they offer both free range and organic options and are available at my local grocery store. When you make these kaiserschmarrn, do not try to skip the butter when you fry them. Splurge a little on this breakfast recipe and your taste buds will thank you!

Chocolate Raspberry Kaiserschmarrn

Egglands Best Eggs for an easy Breakfast Recipe

A simple but elegant breakfast recipe

Prep Time 20 minutes
Cook Time 20 minutes
Total Time 40 minutes

Ingredients

  • For the Kaiserschmarrn:
  • 8 Eggland's Best eggs
  • 2 cups unbleached flour
  • 1/2 cup organic sugar
  • 1 1/3 cups organic whole milk
  • 2 (6 ounce) packages of fresh raspberries
  • 8 ounces raspberry jam
  • butter for frying
  • powdered sugar for dusting
  • For the chocolate sauce:
  • 3/4 cups water
  • 1 1/2 cups sugar
  • 3/4 cups cocoa powder
  • 1 tablespoon vanilla
  • pinch salt

Instructions

  1. Make the chocolate sauce:
  2. Combine all ingredients in a medium sauce pan over medium heat. Whisk and bring to a simmer. Cook 3 to 4 minutes or until well blended and smooth. Let cool
  3. To make the Kaisershmarrn:
  4. In a large bowl combine eggs, flour, milk and sugar. Whisk briskly until well blended and no lumps remain. Heat a skillet over medium heat. Add a TBSP of butter and let it melt. Pour in approximately 1 cup of batter. Let cook until golden brown and almost dry on top. Flip the kaiserschmarrn over and cook other side 1 to 2 minutes more. Place on a cookie sheet in a low oven to stay warm until the rest of the batter is cooked. For each kaiserschmarrn, add another tablespoon of butter. Do not substitute with anything else! It will not taste the same!
  5. To serve:
  6. Lay the kaisershmarrn on the plate, spread with a few tablespoons of jam.Roll up. Drizzle with chocolate syrup, sprinkle with powdered sugar and garnish with fresh raspberries.
