Recipe: Zucchini-Cheese Pancakes

The other day, I went into my garden and discovered a HUGE zucchini that must have been hiding from me for 2 weeks!   Once they get that big, they really have too many seeds and are kindof tough to eat...I usually like making stuffed zucchini, zucchini bread, or some sort of fritters.  Here is a recipe from King Arthur's Flour for Zucchini and Cheese pancakes!  They turned our really good!  Don't forget to squeeze out the excess water from your shredded zucchini!  They came out really tasty and my kids would much rather eat these than straight … [Read more...]

Recipe: Orange and Fennel Salad

I am going to be honest here and tell you that this is the first time in my life I have ever used fennel!  I never really knew what to do with it!  So, I came across a recipe in a Tapas cookbook that I received and it looked so simple I just had to try it.  I am making Kaiserschmarrn for dinner (kindof like a German crepe) and this will make a great side dish!  The original recipe called for black olives but I left those out since I am not a big fan!  I had to make a mad dash out in the rain to get the parsley from the garden!  I couldn't leave … [Read more...]

Recipe: Making Mexican Lasagna with the kids! #grabthesavings

This week, my son is working on earning his Cub Scout Family award.  The last one he will earn before crossing over into Boy Scouts next week.  My daughter loves helping me cook so it was no chore getting HER to help out!  For this meal, we are going to make Mexican Lasagna with pudding parfaits for desert.  We headed to our local Kroger to do some shopping.  I found some great prices on an assortment of Conagra products that I needed for my recipe and the lines weren't too bad, even though it WAS Superbowl day!  Of course, I had to grab some … [Read more...]

Recipe: White Pizza with Broccoli Bagel

When I was at college at the University of New Hampshire, there was a wonderful little bagel sandwich place that had the BEST bagel sandwiches I have ever had!  They were always busy on the weekends but it was worth standing in line for this...the White Pizza with Broccoli Bagel.  Once I graduated and moved out of state I just about went through withdrawal until I learned how easy it was to make myself!  Oh, to think, how much money I could have saved if I had only learned this while I was still a poor college student!  Anyhow, I make them … [Read more...]

Recipe: Sausage Cornbread Pie

This is a good, hearty meal that doesn't take too long to make!  If you want to kick up the heat a little bit you can add a can of green chilis or diced jalepenose or some red pepper.  Put a cookie sheet or foil under the pan since it can get a little messy with the juice bubbling over!  Sausage Cornbread PieIngredients:1 pound sausage (bulk, or out of casings)1 cup onion, chopped2 cloves garlic, minced2 cans diced tomatoes (28 ounces total)1 cup frozen corn1 teaspoon chili powder1 cup cornmeal2/3 cup flour1/2 teaspoon salt2 teaspoons baking … [Read more...]

Recipe: Homemade Caramels

Every year, for the last 13 years (or so!) I have made these caramels as part of my holiday baking.  They get rave reviews every year and I must admit, it is one of the candies that I make that I never get tired of eating!  This is probably the trickiest of my homemade candies because it is the only one that requires a candy thermometer and success (or failure!) is dependent on an exact temperature!  A few degrees too low and you have butterscotch syrup, a few degrees too high and you will lose your teeth when you bite into it!  You can find a … [Read more...]

Recipe: Vietnamese Noodle Soup

My husband and I are really loving the 400 Soups cookbook he got at the bookstore a few weeks ago!  Here is another great soup that our whole family loved!  If anyone can tell me where to find Kaffir Lime Leaves, I would be very grateful!  They are called for in the recipe but we couldn't find them! The recipe calls for making this in a wok (which we did) but I am sure any heavy stock pot would work too!Pork and Noodle Broth with Shrimp12 ounces raw pork (cubed)8 ounces raw shrimp, peeled and deveined8 ounces thin egg noodles (I found them in … [Read more...]
