Recipe (and Tavern Direct Contest): Proscuitto Wrapped Asparagus with Chandelier Chardonnay marinade

I am always looking for ways to increase the veggie consumption in my house. While I love plain carrots and steamed green beans, they can get a little boring after a while! I came across a recipe in a cookbook last week and decided to play around with it. (do you do that? I use my cookbooks as more of a ‘suggestion’ book than a step by step guide!)

Since I am a preferred blogger for Tavern Direct, I get a lot of really great sauces and marinades to try and I decided to replace the plain olive oil in the recipe with a Tavern Direct marinade! if you are not familiar with Tavern Direct, they are:

This month I received the Chandelier Chardonnay and Fire Grilled Garlic marinade. This sauce contains grape seed oil, Chardonnay wine vinegar, lemon juice, soy sauce, garlic, sea salt, spices, and roasted garlic oil. I decided to replace the plain olive oil in my recipe with this flavorful marinade!

I was really impressed with how much garlic is in this marinade…just looking at the bottle you can see the chunks of garlic in it and it is a predominant flavor, along with the tang of the Chardonnay vinegar and the lemon. I think the grape seed oil is slightly lighter in texture and flavor than olive oil. I really loved the flavor that this marinade gave to my veggies!

 Proscuitto Wrapped Asparagus with Chandelier Chardonnay marinade
1. First, get some asparagus (about 1/2 pound or so) and trim the tough end off the bottom. The easiest way to do this is to grasp the tip and the end of ONE spear and bend til it breaks. Then, cut all the other spears to this length!
2. Then, marinate the asparagus in the Tavern Direct Chandelier Chardonnay marinade for about 30 minutes to an hour.
3. When you buy the prosciutto, ask the deli to slice it very thin! Get about 12 slices. You can cut it lengthwise in half and get about 24 pieces of asparagus from it.
4. Wrap each piece of asparagus with the prosciutto and baste with a little bit of the marinade. Put on a baking sheet (I like to raise it up with a cooling rack set INTO the cookie sheet) and season with pepper. Bake at 400 degrees for 10-12 minutes.
5. Let cool and enjoy!
