This Healthy Sloppy Joe Recipe is Perfect for Family Dinner!

Avocado and Greek Yogurt Dip Recipe

This avocado and Greek yogurt dip recipe has been sponsored by Stonyfield yogurt and Late July chips. I am a Stonyfield Farms ambassador but all opinions expressed here are my own.Growing up in suburban Connecticut I never once saw an avocado. I don't think I could even tell you as a child what one looked like. We ate rather traditional New England food and while I love baked beans and pot roast, there was very little international cuisine on the menu. Fast forward to life after college and I am down in Houston, Tx getting overwhelmed with … [Read more...]

Easy Kale Recipe: Sausage and Kale Saute with Brown Rice

This easy kale recipe has been sponsored by Nature's Greens but all opinions expressed here are my own.One of the easiest ways to improve your diet is to make sure you eat a rainbow of foods every day. That does NOT mean you should be eating red cupcakes, green shamrock smoothies and orange Cheetos! Sorry, people! The rainbow of colors has to come from nature, not a bottle of food coloring! Boldly colored fruits and vegetables tend to be the ones that are the healthiest for us and dark green leafy greens like kale are loaded with heart … [Read more...]

Creamy Tomato Soup with Basil

I was provided with one or more of the products shown in this post for review purposes but all opinions expressed are my own.Do you have a food that you crave when you are not feeling well, stressed out, or just want a bit of "yum" in an otherwise dreary day? My comfort food has always been a grilled cheese sandwich with tomato soup. In fact, I think I ate that meal almost every single day for my second pregnancy. Other foods did not appeal to me at all but a gooey grilled cheese sandwich and a can of tomato soup hit the spot. Well, bread … [Read more...]

I created this smoothie recipe as part of a campaign for Stonyfield yogurt. As a Stonyfield ambassador I received samples of their products at no charge to facilitate my post.I am a huge fan of yogurt and when I grocery shop the cart usually contains dozens of different containers for both me and the kids. While I love plain Greek yogurt, I must admit the kids have a weakness for all the 'cool' flavors. When I was sent an assortment of flavors of Stonyfield Greek yogurt to try out, the first flavor that caught my son's eye was the Cafe … [Read more...]

Shrimp Fajita Rice Bowl Recipe #15MinuteSuppers

Over the last few weeks I have been trying very hard to eat gluten free. I am hoping it helps with some inflammatory issues I am having but it is a real struggle for me to not starve to death. Honestly, I have a serious love affair with grains...whether it is cereal, toast, pasta or Cheetos I just hear those carbs calling to me from my pantry. I have had to change the way I eat rather drastically but so far so good. Last week I made my Shrimp Fajita Omelette which was delicious and this week I decided to stay with the fajita theme and make a … [Read more...]

I received samples  at no charge for inclusion in this post but all opinions expressed here are my own.A few weeks ago I decided to try a gluten free diet to see if could help with a few random health issues. Shrimp Fajita Omelette Recipe #15MinuteSuppers

I love Mexican food and am particularly partial to meats, veggies, cheese, etc all wrapped up in a tasty flour tortilla. Since I am trying to eat gluten free, tortillas are a huge no no. The other day I was drooling over an omelette recipe and realized that the egg part of it looked remarkably like my beloved flour tortilla. Since I had shrimp and a few other fajita ingredients I decided to see if I could create an omelette recipe that would remind me of a shrimp fajita. I was pleasantly surprised with the results! Served with a side of salsa, … [Read more...]

Thai Inspired Cabbage Rolls

Cool weather means the disappearance of many of my favorite summer veggies. Gone is the corn on the cob, bright heirloom tomatoes, and local green beans. Rather than choosing non local vegetables, I am trying to embrace a few of the cool weather produce items instead. This isn't always easy....cabbage, broccoli, cauliflower and winter squash are not always well received by my kids. I came across a recipe for vegetable cabbage rolls using tofu and a few Thai spices that I thought sounded promising. (see the original recipe at Food Inspired By)  … [Read more...]
