#Recipe: Fruity Snack Balls (#vegan)

My husband and I are really having a lot of fun finding new vegan recipes to try.  This one is from Vegan Cooking for Carnivores: Over 125 Recipes So Tasty You Won’t Miss the Meat (review to come soon!) that is written by the chef who cooks for Ellen DeGeneres.  My husband is a HUGE fan of Ellen’s and DVRs her show every day to watch after work.  Yeah, not all Ellen fans are female!  Anyhow, here is a great recipe for a sweet and fruity snack I guarantee your kids will love!  (and I admit, I have eaten a lot of them myself!)  It is incredibly simple and only a few ingredients!

Fruity Snack Balls

Ingredients:

3/4 cup shredded, unsweetened coconut
3/4 cup dried cherries (we couldn’t find these and used dried pineapple)
1 cup dried mango
1/2 cup dried cranberries
1 cup sliced, raw almonds

Directions:

 1.  In the bowl of a food processor, combine the coconut, cherries, mango and cranberries.  Process with a steel blade for a full minute.

2.  Add the almonds and process for another minute

3. Roll mixture into balls, using approximately 1 TBSP per snack ball

4.  When all the mixture has been rolled, store in the refrigerator.

You can also crumble this into small bits and use as a topping for cereal.
