Saying thanks with a sweet potato pie

Ever since my children were in Kindergarten, I have volunteered in their classroom. I was the mom cooking with them on Friday mornings, reading to them on Earth Day, chaperoning the field trip, and organizing holiday parties. I loved every moment I spent with them and I learned something very important about myself. I discovered that I do NOT have the patience to be a teacher!

Seriously, after an hour of volunteering I was about ready to strangle half of those kids! You really have to be dedicated and love your job to be a good teacher and I am eternally grateful for the hard work they put into educating our kids. I encourage you to take a moment this holiday season and say THANKYOU to your hard working teachers!

Thankful for Old Fashioned Recipes

This sweet potato pie is a delicious way to say thankyou to a teacher who dedicates so much time and energy to education our kids! Sweet Potato Pie Recipe

Yield: 6 to 8 servings

Sweet Potato Pie

Sweet potato pie is a traditional southern dessert recipe, often served in place of pumpkin pie for Thanksgiving or Christmas.  Loaded with cooked sweet potato and plenty of spices, this southern staple will be a big hit!

Prep Time 15 minutes
Cook Time 1 hour
Total Time 1 hour 15 minutes

Ingredients

  • 1/3 cup butter, softened to room temperature
  • 1/2 cup sugar
  • 2 eggs
  • 3/4 cup evaporated milk
  • 2 cups mashed sweet potatoes
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 unbaked pastry shell (9 inches) or your own homemade pie crust, unbaked

Instructions

  1. In a large mixing bowl, cream the butter and the sugar.
  2. Add eggs, one at a time, mixing well until completely smooth
  3. Add remaining ingredients and mix well.
  4. Pour mixture into pie shell.
  5. Bake at 425° for 15 minutes.
  6. Reduce heat to 350° and bake 35-40 minutes longer or until a knife inserted near the center comes out clean.
  7. Cool before serving and store in refrigerator.

No matter what you decide to give your teacher, I encourage you to include a thoughtful note. If your child is old enough, have THEM write the teacher a message. Tell your teacher what you appreciate about them or something special that you remember from class or a field trip you enjoyed. Your note doesn’t have to be long or particularly eloquent, just personal!

If you have some washi tape and some plain paper around you can create a beautiful Christmas card in just minutes for your teacher. Here is a brief description of how to do this:

Supplies

2 pieces of white paper, one approximately 4 inches x 6 inches long and the other about 2 x 2 inches long

1 piece of red or green paper, approximately 4 inches x 6 inches long

assorted red, white, green themed washi tape

scalloped edge scissors

glue stick

BIC Mark-It™  permanent markers

Directions:

Lay your 4 inch by 6 inch white paper on the table and cover is with washi tape. Start at one corner and add the washi tape at a diagnol from one end to another. Overlap the tape onto the reverse side as necessary.

Glue your red or green paper to the reverse side of the white paper so that you hide the edges of the washi tape.

Fold your card in half

Using scalloped scissors, cut along the edges of the smaller white piece of paper and glue onto the right interior side of the card.

Using your BIC Mark-It™  permanent markers to write your personalized message in the card.

  1. I love sweet potato pie, and I’ve never made it. There is this little diner back in my home town – a little old lady has been baking pies for them for over 35 years, and sweet potato is one of her best sellers (after coconut cream). Maybe it’s time that I try baking one for myself.
