My son decided that he wanted to give up meat for Lent and I have been hard at work trying to create recipes that he will enjoy that also have enough protein for a growing teenager.  I recently received The Complete Idiot’s Guide to Vegan Slow Cooking (Complete Idiot’s Guides (Lifestyle Paperback)) and have found a number of great recipes in it to try.  If you are interested in cooking more meatless meals or just want to learn more about vegan slow cooking I think this is a great choice of books.

This cookbook is full of over 240 vegan recipes designed for your slow cooker.  The author gives a great introduction into the world of slow cookers, discussing the different types that are available, their safety features, and tips on using them for meal creation.  She also provides a great list of pantry items you should consider keeping in stock if you want to be successful in your vegan slow cooking adventures.  The recipes in this book range from warm and hearty breakfasts, snacks, appetizers, desserts and a ton of other options.  She also includes recipes for things like sauces, spread, and dips that might make a great accompaniment to some of the other recipes.

The recipes themselves are very thorough and easy to follow.  Ingredients and directions, yield, preparation time, cook time and variations you might consider depending on your dietary needs.  I really appreciate the little tips, definitions, and other useful information that the author includes at the bottom of each recipe.  I do wish there were some pictures in the cookbook but the core information in this vegan slow cooking guide is all very complete and easy to understand.  I have a tendency to prefer the recipes that are vegan ‘naturally’ and don’t use artificial meat substitutes but there is a nice selection of both types of recipes so I had no trouble finding recipes I enjoyed.

If you are looking to reduce your meat consumption,  The Complete Idiot’s Guide to Vegan Slow Cooking is a great place to start.  Chaotic schedules make slow cookers a HUGE help and there is no reason you can’t have a meatless dinner just because you are choosing to use your slow cooker!

  4. Right now we are really into our veggie burgers. I like black bean with avocado, tomato, spinach and feta.

    • I want to learn how to make veggie burgers from scratch. Right now I just buy them premade.

      • I buy the pre made as well. I make great turkey burgers, but I have yet to try my hand at veggie’s. I will probably give it a whirl this spring. That is when I am most adventurous with vegetables in the kitchen.

    We *love* making sweet potato fajitas! Super easy, just cook the sweet potatoes whole in the oven or microwave, peel and dice, then use them in place of meat in your favorite fajita recipe. The combo of spicy/smoky and sweet/creamy is so good!
