A Taste of Summer with a Pineapple Breeze Mocktail Recipe #Outshine

Now that the holidays have passed and we are moving into February I am completely and totally over the whole winter thing. Thoroughly sick of brown grass, sweaters, my heating bills, and everything else having to do with the cold weather. I am ready for spring and summer to arrive. I miss flip flops and tank tops and playing in my garden but for another month or two I will have to just wait patiently. Unfortunately I am not a particularly patient person so when I was at the grocery store last week I picked up some delicious Outshine Fruit Bars to use in a summer themed mocktail recipe. A cold, smooth and fruity mocktail recipe topped with a little umbrella is just what my dreary winter day needed!

Outshine Fruit Bars are a huge hit in my house year round. Who says frozen goodness can only be enjoyed in summer, right? One of my daughter’s favorite flavors is the Outshine Strawberry fruit bars, with all natural ingredients and chunks of real fruit. I discovered a new flavor on my trip to the grocery store that I have never tried before:  Outshine Coconut Waters. Being the avid fruit bar lovers that we are, I couldn’t choose just one box so I came home with several. I hid the Coconut Waters with pineapple to use in my mocktail recipe or I knew the kids would eat them! I’m sure I’m not the only  mom that hides the really awesome stuff from their kids, right?

See those chunks in that Outshine Coconut Water bar? Those are chunks of real pineapple. Those pineapple chunks are frozen into a bar made from young coconut water. I am not sure what the difference between ‘young’ coconut water and regular old coconut water is but these bars have a wonderful, lightly sweet coconutty flavor. And creating my Pineapple Breeze Mocktail Recipe takes only a few minutes with the addition of real pineapple, pineapple juice and just a touch of coconut milk. Nothing screams summer like coconut and pineapple, right?

This mocktail recipe is incredibly simple and takes less than 5 minutes to make. Using the Outshine Coconut Water bars instead of ice cubes made it easier to make. Ever try crushing ice cubes in your blender? Not always easy! Just throw all the ingredients into your blender and mix til smooth. Top with a bit of fresh pineapple, a sprig of mint and a tiny umbrella for a quick and tasty reminder that summer is on the way!

Pineapple Breeze Mocktail Recipe

Pineapple Breeze Mocktail Recipe

Delicious and refreshing, full of fruity flavor!

Prep Time 5 minutes
Total Time 5 minutes

Ingredients

  • 4 Outshine Coconut Water bars with pineapple (removed from sticks)
  • 2 cups fresh pineapple, cut into chunks
  • 1/2 cup pineapple juice
  • 1/4 cup coconut milk
  • sprigs of mint, chunks of pineapple, and paper umbrellas for serving

Instructions

  1. Place all ingredients in a blender and mix on high until smooth.
  2. Pour into a glass and garnish with additional pineapple, mint and umbrella before serving.

  1. As I look out my window is see all of this snow, this drink makes me long for summer. It looks so refreshing and delicious. If we ever thaw out here, I’m going to make myself one!

You must be on the east coast, as we call “Edy’s” by a different name – “Dreyers.” I hate pineapple and coconut, so you can have the drink all to yourself, but we also have about 4 different flavors of Outshine bars in the freezer. BTW, what program did you use to make that cool recipe graphic?

    • I wonder if you could do a strawberry version with the strawberry Outshine bars, fresh berries and a smidge of apple juice? I used picmonkey for the picture to add the words? The bars are delicious any way you choose to eat them!
