When you are feeding hungry teenage boys you need to learn to serve bread of some sort at every meal. Sure, he gets plenty of meat, veggies, fruits and dairy but the bottomless pit of hunger requires a whole bunch of carbs on a daily basis. Sausage Cheese Biscuits are a huge hit in my house and I am ashamed to say that I usually start with a premade baking mix. I know…totally NOT the healthiest choice to make but my biscuits usually come out as dense as bricks when I start from scratch! However, I think I have figured out my problem and this sausage cheese biscuits recipe from scratch came out light, flaky and delicious!

Sausage Cheese Biscuits from Scratch

So, what have I been doing wrong all these years? I think I have been far to vigorous in my mixing. As I browsed through many biscuit recipes online this weekend, I noticed that they ALL said “Mix only until combined”. I decided to try less mixing for this cheese biscuits recipe and was very pleased with the results.

I will say that the cheese you choose for this biscuit recipe is very important. I always go with the sharpest cheddar I can find and Cabot is one of my favorite brands. As a Cabot Cheese Board member, I get the chance to try out LOTS of Cabot cheese and they have an amazing variety to choose from. I recommend shredding your own cheese whenever you can since I think it really does have much better flavor than the pre bagged stuff. This recipe is based loosely on a Food Network recipe. The original author recommended shaking the buttermilk although I am not sure why! I included that step in my own recipe and it seems to have come out quite tasty.

Sausage Cheese Biscuits Recipe with Jalapenos

Cheddar Cheese Biscuits Recipe with Sausage and Jalapeno

Delicious and flavorful sausage cheese biscuits recipe is perfect with soup, salad or for a breakfast sandwich.

Ingredients

  • 3 cups all-purpose flour, plus more as needed
  • 1 1/2 tablespoon baking powder
  • 1 teaspoons kosher salt
  • 1/4 tsp garlic powder
  • 1/4 tsp dried sage
  • 2 sticks (1 cup) cold unsalted butter, diced
  • 3/4 cup cold buttermilk, shaken (plus a little more if needed to hold biscuit dough together)
  • 1 egg
  • 1 1/2 cups grated extra-sharp Cabot Cheddar
  • 1 cup cooked, crumbled sausage
  • 3 jalapenos, deseeded and diced small
  • Maldon sea salt, optional

Instructions

  1. In the bowl of a mixer, place flour, baking powder, salt, garlic powder, sage, and diced butter
  2. Mix with paddle until butter is mixed in and tiny pea sized bits of flour are clumping together. (or it resembles wet sand...you just dont want to see chunks of butter still)
  3. In a mason jar, place buttermilk. Tighten lid and shake vigorously for a few seconds. Remove lid. Add egg into the jar and whisk with fork until egg is combined
  4. With mixer on low, add buttermilk and egg mixture to dry ingredients. Add cheese, sausage and jalapenos and mix just until the dough holds together. Add a little bit more buttermilk if mixture is too dry.
  5. Turn dough onto a well floured surface and kneed just enough to get into into a ball. Press or roll with rolling pin into a rectangle approximately 2 inches thick.
  6. Cut with a floured knife into 12 pieces
  7. Place biscuits onto a cookie sheet lined with parchment paper
  8. Bake at 425 degrees for 20 to 25 minutes or until golden brown.

  1. My grandmother used to make chilaly (it’s in the Fannie Farmer Cookbook – essentially cheese, tomatoes and egg melted together with some other seasonings), served over Ritz crackers. Love it!

  2. These biscuits look amazing! I never think of adding things in like this. I love cheesy anything but homemade Mac and cheese or a really good grilled cheese are hard to beat!

  3. Cheese is an integral part of so many of my favorite recipes that it’s hard to choose a favorite, but I think for letting that lovely cheese shine through, I’d have to say my top pick would be a nice grilled cheese sandwich. Simple but delicious!

  5. My favorite “cheese” related recipe is loaded potato and chicken casserole. It has baked potato, chicken breast, layers of cheese, and bacon.
