Raise your hand if you love a good flatbread pizza! I am right there with you, whether the pizza toppings include traditional things like pepperoni and sausage or something a little hip and fun like goat cheese and prosciutto. Pizza can be a delicious way to start your day, especially this easy breakfast pizza using Pete & Gerry’s Pasture-Raised Eggs and fresh herbs from my garden. The warm wet weather this month has them absolutely taking over my patio, just looking for a recipe to shine in.

Pasture-Raised Eggs Matter
Eggs are a healthy, sustainable source of protein and essential nutrients. I make sure to eat several a week and yes, they even make a great topping for breakfast pizzas!
I am very picky about my eggs and think you should be too. Healthy eggs come from healthy hens which do a great deal to help create a healthier planet. Breakfast Pizza Ingredients
This flatbread breakfast pizza requires very few ingredients and, even better, very little time. Here is what you need for one pizza. Scale up if you are feeding more than just yourself.
Just a quick note, I chose to use garlic aioli as my ‘sauce’. You could use plain olive oil, traditional tomato sauce, pesto, alfredo sauce, or whatever other flavors your heart desires.
Ingredients:
- One naan flatbread.
- 3 to 4 TBSP garlic aioli.
- One Pete & Gerry’s Pasture-Raised Egg.
- 1 cup shredded mozzarella cheese.
- 2 to 3 TBSP sliced red onion
- Mixed fresh herbs of your choosing, finely chopped
How to Make Flatbread Pizzas
I love using flatbread as my pizza crust because I rarely have the time or energy to make my own pizza crust. Making this naan pizza takes only a few minutes. Assemble your ingredients, pile the toppings onto the naan, slide it onto a preheated pizza stone, and pour on the egg. Then just let it bake until set.
Let me just mention that YES, this is a runny yolk. If you are squeamish about soft-cooked eggs and need your egg completely dry and set firm inside, you will have to fry it in a pan first before sliding it onto your pizza. I am perfectly fine with soft, runny yolks so this one-step process worked just fine for me. Be patient though, and let your pizza cook until the white is completely set.
Make sure your oven is preheated with the pizza stone inside. A hot pizza stone will help give your crust a little firmness on the bottom.
Also, feel free to change up the cheese you use on this breakfast pizza as well. Cheddar or goat cheese would add a nice twist as well.
Just lay your flatbread on a cutting board and spread your sauce on top. Sprinkle the shredded cheese and red onion on top, leaving a small area slightly less full to pour the egg onto. Once you put the pizza on the pizza stone in the oven, pour the egg onto it and close the door.
Let the pizza bake until the egg white is set and the cheese is starting to brown, about 10 to 12 minutes. Then, remove it from the oven and sprinkle with fresh herbs before slicing and eating.
This is a great recipe for summer when you are looking for something to do with all those fresh herbs in your garden. And remember, breakfast for dinner is a huge hit, especially on lazy summer evenings when you just don’t have the energy for a big meal.

Flatbread Breakfast Pizza with Egg and Fresh Herbs
This easy flatbread breakfast pizza is quick and delicious. Topped with garlic aioli, mozzarella cheese, pasture-raised egg, and fresh herbs, its a simple egg recipe your whole family will love.
Ingredients
- One naan flatbread.
- 3 to 4 TBSP garlic aioli.
- One Pete & Gerry's Pasture-Raised egg
- 1 cup shredded mozzarella cheese
- 2 to 3 TBSP sliced red onion
- Mixed fresh herbs of your choosing, finely chopped
Instructions
- Put a pizza stone in the oven. Preheat the oven to 500 degrees.
- Place the naan on a cutting board and spread with the garlic aioli. Add the shredded cheese and red onion. Make a small well in the center of the cheese to pour the egg into.
- Crack the egg into a bowl
- Place the breakfast pizza onto the hot pizza stone in the oven and gently pour the egg on top.
- Close the oven door and cook 10 to 12 minutes or until the egg white is completely set. If you want to set the egg a bit more, turn the heat to broil and leave another minute or two. Keep an eye on it so it doesn't get too brow.
- Remove the flatbread pizza from the oven and sprinkle with chopped fresh herbs.
- Slice and enjoy!

So many yummy way to serve eggs, it’s hard to choose one favorite! But after my spouse had a business trip to Japan, he raved about the omelettes he had in Tokyo, so I got a special pan to make Japanese omelettes (Tamagoyaki), which have layers and layers of seasoned egg with or without fillings in between – I usually just use cheese. Surprisingly simple to make, with fabulous results.
