A couple of weeks ago, my husband and I went out to brunch and had the most delicious creation we have ever tasted. It was a blueberry infused quinoa that was served with fruit, nuts, granola and a ton of other fresh and healthy ingredients. When I got the chance to try Sambazon Acai juices I thought I would try to recreate something similar for my own family. My kids get bored with cereal very quickly so I always have my eye out for a new healthy breakfast recipe that they might enjoy. This is a really simple way to get just about every food group into your meal and it would work as a healthy lunch as well as breakfast.

 Acai Infused Quinoa Breakfast Cereal

A healthy breakfast recipe loaded with flavor and nutrients!

Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes


  • 1/2 cup white quinoa
  • 1/2 cup water
  • 1/2 cup Sambazon Acai juice
  • 1 whole banana, sliced into 4 pieces
  • 3 to 4 TBSP agave nectar
  • 1/3 cup coconut
  • 2 to 4 strawberries, cut in half
  • 3 TBSP chopped walnuts
  • 1/4 cup coconut milk


  1. In a medium sauce pan, place the water, Sambazon and quinoa
  2. Simmer over medium heat until all the liquid is absorbed (about 30 minutes)
  3. Refrigerate until cold (overnight works best)
  4. In a good sized serving bowl, use an icecream scoop to place one serving of Quinoa
  5. In a small bowl, place the agave nectar
  6. Onto a small plate, place the coconut
  7. Brush the banana with the agave nectar and roll in the coconut
  8. Place the banana in the bowl with the quinoa
  9. Set strawberries in the bowl between the bananas
  10. Sprinkle with the chopped walnuts
  11. Drizzle with coconut milk and serve immediately

So, what did I think of the Sambazon juices that I tried? I have to say, I was a huge fan of Sambazon Acai beverages even before I got the chance to work with Mom’s Meet on a review. They are thicker than something like apple juice but not a smoothie. They are the perfect balance of sweet and tart and make a very refreshing drink. I not only love the favor of the juice but am very impressed with their commitment to the environment. My local Kroger only had the original and Blueberry and Pomegranate varieties, both of which I loved. I am going to keep my eye out for the other flavors. The Mocha Java Energy Blend sounds like it would make a heavenly on the go breakfast!
