We frequently had a fancy Sunday dinner that included a roasted chicken or New England style pot roast that had slow cooked in the oven for several hours. Nowadays, Sundays seem to be a bit more complicated. There are kids activities to deal with, errands to run, a house to clean and a to do list that is way too long.
However, I am also adamant that the family sit down to dinner together every night. This pasta with goat cheese and asparagus recipe is the perfect solution to busy weeknight meals! Sunday dinner may not be the same as it was 30 years ago but it is still an important sit down meal with my family. This asparagus recipe is perfect for April because cool weather brings fresh asparagus to our seasonal food lineup. Angle hair pasta cooks very quickly, as does everything else in this asparagus recipe!
A quick and easy Sunday dinner allows for the to do list to get done while still letting me enjoy quality time with my family. Now, if I could just figure out how to get my asparagus to grow better in my garden. At this point I only get about 6 stalks of asparagus during the entire growing season so I am stuck buying it at the grocery store or farmer’s market for this asparagus recipe. Pasta with Goat Cheese and Asparagus Recipe
Fresh asparagus, angle hair pasta, and a creamy sauce made with goat cheese and Parmesan. It is an easy dinner recipe with loads of flavor
Ingredients
- 1 pound asparagus, trimmed and cut into 2 inch pieces
- 1/2 pound angel hair pasta
- 3 cloves garlic, minced
- 4 tablespoons unsalted butter, divided
- 2 tablespoons all-purpose flour
- 2 cups chicken or vegetable broth
- 4 ounces goat cheese
- 1/2 cup grated Parmesan cheese, plus additional for serving
- salt and freshly ground black pepper to taste
- 3 to 4 TBSP fresh parsley for serving.
Instructions
- Cook pasta according to package directions
- In a large saute pan, heat 2 TBSP butter over medium heat.
- Saute garlic and asparagus 3 to 4 minutes or until asparagus is just starting to get tender. Remove asparagus with a slotted spoon and set aside.
- In the same pan, add remaining 2 TBSP butter.
- Whisk in the flour and mix until combined
- Add the chicken stock and stir til slightly thickened.
- Add in the goat cheese and Parmesan cheese. Mix until melted and smooth.
- Season cheese sauce with fresh pepper and salt to taste.
- Remove from heat and add cooked pasta and asparagus. Toss to coat
- Serve with additional Parmesan cheese and fresh parsley.
