I just kindof winged it on this recipe! I found a great deal recently on Kashi 7 whole grain Puffs (shown at left) and was looking for a creative way to use them. I wanted something that was similar to a Rice Krispies treat without the marshmallows (ie something slightly healthier!). My kids love anything peanut butter so I figured that was a good place to start! Here is my recipe! They are super easy and only took about 10 minutes from start to finish. Then you just have to let them cool which is the hard part!
Kashi Peanut Butter Bars
1 cup honey
1 1/3 cup peanut butter
1/2 stick butter
1 tsp vanilla
1/2 cup coconut
1/2 cup chocolate chips
4 cups Kashi 7 Grain Puffs
1 cup oatmeal

Spray a 13 x 9 inch pan with PAM or grease with butter

In a large sauce pan melt the butter, honey and peanut butter. Bring to a boil and simmer 3 minutes

Remove from heat and add the vanilla

Dump in remaining ingredients (coconut, oatmeal, chococolate chips, and Kashi cereal)

Stir until well blended

Dump into the 13 x 9 inch pan and press down evenly (best done, I think, with some waxed paper!)

Let cool and cut into bars

they are yummy and while not exactly HEALTHY I would say they are healthier than store bought cookies!
