Many years ago, when I first moved out into my own apartment, my older sister sent me a few simple handwritten recipes that she thought I could handle making on my own. I guess she was worried that I would starve to death without my mom around to cook for me. This was one of the recipes she sent me. Over the years I have played with it…adding spices and substituting one thing for another and this is the end result. A creamy, cheesy chicken and vegetable creation that is served over rice. Easy, delicious, and something my whole family loves. So, a huge thank you to Ellen at Confessions of an Overworked Mom for ensuring that her little sister didn’t starve to death on the road to adulthood!
