The holidays are a chaotic time of year and after 2 weeks of company I have learned a new appreciation for people who have to cook for a large family on a regular basis. I never realized how hard it was to feed a crowd but this easy pasta recipe was a big hit and can be scaled up or down, depending on how many people you are feeding. Pasta is filling and much of this meal can be made up ahead of time so that dinner can be put on the table without too much chaos at 5 PM when the kids are getting cranky. Make up a large salad earlier in the day and grill the chicken ahead of time if needed. With only 30 minutes of work, this easy pasta recipe will be a big hit!

My easy pasta recipe may not create quite as much excitement as Meg Ryan’s did but it was a big hit with my family and is an easy meal to create when you have a house full of guests or are pressed for time. Rushing to holiday band concerts, wrapping gifts for teachers and just generally surviving the holiday chaos without going completely crazy means finding easy, healthy and quick meals like the one below.
