I absolutely adore cranberries so once Thanksgiving is here, I stock up. The are delicious in homemade cranberry sauce, baked into breads and cakes and make your holiday cocktail look all that much more festive. When Cabot Creamery sent me some delicious yogurt to try out, I decided to pair the tangy flavors of cranberry and yogurt with the sweet flavor of an easy vanilla cake recipe. This is a relatively dense and moist cake since you basically substitute the yogurt for the milk in a boxed cake mix. Now, I don’t use a lot of boxed cake mixes but honestly, they come in really handy when you are in a hurry. Also, I discovered a boxed cake mix with no artificial ingredients and have been pretty happy with it. There are some days when totally from scratch just doesn’t work. And with no artificial ingredients, I don’t necessarily mind letting my kids eat cake!
