Over the past few years, a movement called “Meatless Monday” surfaced that encourages families to choose alternatives to meat on Mondays. It’s small step to help improve your family’s health and the health of the planet. Sometimes it is hard to come up with vegetarian dishes that the whole family will enjoy but this one is a huge hit with my kids and easy to make!
