As a work from home mom you would think I have all the time in the world to create a healthy lunch for myself, right? Well, not really! Between errands, housework, my job and everything else that needs to get done I am lucky to find time to grab anything to eat at all. I am always looking for a quick and healthy meal idea to add to my repertoire. I try to stock my fridge and pantry with healthy options so I don’t end up eating cookies for lunch. I decided to try the Multi-Grain Medley in my lunch today. This recipe will make a nice size lunch for one person or a side dish for 2. The pine nuts offer some protein, the onion gives it a bit of a bite and there are plenty of veggies in it. Here is my quick and healthy meal idea using Minute® Ready to Serve Multi-Grain Medley:

Multi-Grain Garden Salad
- 1 cup Minute Multi-Grain Medley
- 1/2 small cucumber, deseeded and chopped
- 1 tomato deseeded and chopped
- 2 TBSP onion, minced
- 2 TBSP pine nuts
- 2 TBSP fresh parsely, chopped
- 1 TBSP olive oil
- 1 TBSP balsamic vinegar
- salt and pepper to taste
- add the chopped vegetables, olive oil, vinegar, salt and pepper in a bowl and mix gently to combine.
- Microwave the Minute Ready to Serve Multi-Grain Medley according to package directions
- Add the rice to the bowl with the vegetables and stir til combined
- Enjoy immediately or chill before serving
