Quick and Healthy Meal Idea: Mult-Grain Garden Salad #LoveEveryMinute

As a work from home mom you would think I have all the time in the world to create a healthy lunch for myself, right? Well, not really! Between errands, housework, my job and everything else that needs to get done I am lucky to find time to grab anything to eat at all. I am always looking for a quick and healthy meal idea to add to my repertoire. I try to stock my fridge and pantry with healthy options so I don’t end up eating cookies for lunch. Even ORGANIC cookies don’t really make a healthy lunch! If you, too, are looking for a quick  and healthy meal idea, I wanted to share a recipe that I recently made using Minute® Ready to Serve Rice. I decided to try the Multi-Grain Medley in my lunch today. This recipe will make a nice size lunch for one person or a side dish for 2. The grains in the Multi-Grain Medley include brown rice, quinoa, barley, oats, wheat and rye. It has a slightly nutty flavor that I really enjoyed. The pine nuts offer some protein, the onion gives it a bit of a bite and there are plenty of veggies in it. Here is my quick and healthy meal idea using Minute® Ready to Serve Multi-Grain Medley:

 Multi-Grain Garden Salad

Mult-Grain Garden Salad

A quick and healthy meal with lots of whole grains and vegetables

Prep Time 5 minutes
Cook Time 1 minute
Total Time 6 minutes

Ingredients

  • 1 cup Minute Multi-Grain Medley
  • 1/2 small cucumber, deseeded and chopped
  • 1 tomato deseeded and chopped
  • 2 TBSP onion, minced
  • 2 TBSP pine nuts
  • 2 TBSP fresh parsely, chopped
  • 1 TBSP olive oil
  • 1 TBSP balsamic vinegar
  • salt and pepper to taste

Instructions

  1. add the chopped vegetables, olive oil, vinegar, salt and pepper in a bowl and mix gently to combine.
  2. Microwave the Minute Ready to Serve Multi-Grain Medley according to package directions
  3. Add the rice to the bowl with the vegetables and stir til combined
  4. Enjoy immediately or chill before serving

  1. Your multi-grain salad looks really good. I had a chance to try this rice and love the convenience of it. It also makes a great after shcool snack for my son who loves rice. Usually when I make rice I make large batches for dinner. But when I want rice just for one these are awesome!

  2. Wow. You lost me. You have other posts about making your own food coloring from kale, making a scrub from used coffee grounds, and then you have this one promoting an individual plastic rice cup in a large cardboard box? Slightly eco un-friendly, don’t you think? Perhaps you should rethink some of your sponsors if they are promoting something that seems to be against the core mission of your blog.

    • I appreciate your opinion but the core mission of my blog has ALWAYS been to go green ONE step at a time. I do not live a 100% green life. I eat fast food. I have a cheeto addiction. I drink diet coke. I do all of these things in moderation so that I can find a balance. That tomato and cucumber were organic. The parsley came from my backyard. And I recycled the plastic cup when I was done. Is that perfect? No. But I have never claimed to be perfect.
