During the week, we are pressed for time in my house. Between homework, practicing their music, and afterschool activities my kids have a lot to do. For some reason, most of these activities require my attention!
Tonight, I was trying to make dinner while simultaneously helping my daughter convert centimeters to inches and folding laundry. Thankfully, I had a really simple dinner planned so I got it all done and dinner was even still edible!

t is certainly easy to use! If I could make any changes at all, I would just add a few more categories…maybe soup or salad? Or a nice grilling section would be nice too! But, overall, it is a really user friendly website. Lemon-Garlic Chicken
PAM® Original No-Stick Cooking Spray
1/2 cup Italian-style bread crumbs
1/2 teaspoon garlic salt
1 teaspoon lemon pepper
1/4 cup lemon juice
2 tablespoons Pure Wesson® Canola Oil
4 boneless skinless chicken breasts (4 breasts = 1 lb)
Directions
1. Preheat oven to 375°F. Spray shallow baking pan with cooking spray. Combine bread crumbs, garlic salt and lemon pepper on a plate. Combine lemon juice and oil in a glass measuring cup.
2. Place the chicken in a shallow pan with oil/lemon juice mixture. Turn to coat.
3. Take each chicken breast and coat it in breadcrumbs, then place it in the pan for baking.
4. Spray tops of chicken with cooking spray. Bake 20 to 25 minutes or until chicken is no longer pink in centers (165°F)
Serve with some healthy sidedishes like green beans and homemade macaroni and cheese with whole wheat pasta! Healthy meal, happy kids!
