Mexican Seven Layer Dip Recipe

 
I love Mexican food but don’t really make it too often. Tonight, I decided to throw together this recipe I found on Allrecipes.com. My kids and I are going to watch Beverly Hills Chihuaha 2 and I thought this would be the perfect snack to nibble on while we watch! We are going to have our very own fiesta! The original recipe had sliced black olives on top but since I am not a fan of olives I threw on fresh chopped cilantro instead. I headed to Kroger to grab my ingredients, including several Conagra products like Hunts diced tomatoes, Rotel, and Rosarita refried beans. I grabbed tons of fresh ingredients, too and the recipe is so simple! Just layer everything in a pan and chill til ready to serve! Here is what I did:

Mexican Seven Layer Dip
 
1 can Rosarita refried beans
1 package taco seasoning
1 1/2 cups fresh guacamole
1 1/2 cups sour cream
1 14 ounce can Hunts diced tomatoes (drained)
1 can Rotel (drained)
2 cups shredded cheese
6 green onions (sliced)
1 cup chopped fresh cilantro
 
This is enough to layer in 2 glass pie plates. Divide all ingredients in half between the two dishes. If you only want to make one dish, use half the ingredients listed above. When you are done layering, throw it in the fridge to chill until you are ready to serve. The order of the layers doesn’t really matter as long as you end with the cheese, onions, and cilantro on top.

I decided to try making a few homemade tortilla chips with Wesson oil and some soft flour tortillas. Just brush the tortillas with oil and season with garlic salt. Slice into wedges with a pizza cutter and bake at 450 degrees for about 5 minutes or so. They cook really fast so don’t go too far away from the oven! You can flip them once to help them cook evenly. They came out really crispy and flavorful! I was really impressed!
 

Managed to get everyone showered and homework finished so we could relax and enjoy our fiesta with Beverly Hills Chihuaha 2! In the movie, Chloe and Papi are now married and make a wish on a falling star. 4 months later they are blessed with PUPPIES!

My kids love animals in movies and even better is BABY animals! This is a story of the blessings of love and family and sticking together to overcome a problem. A great lesson for them to learn in a fun and light-hearted movie! Even mommy didn’t mind sitting through it and even chuckled at the ‘Chihuahua warrior’ story Papi tells to his pups!
