Easy Pumpkin Pudding Recipe

This homemade pudding recipe tastes just like the inside of your favorite pumpkin pie recipe! Rich and creamy homemade pudding loaded with canned pumpkin, pumpkin spice, brown sugar and vanilla. A creamy pudding to serve guests at Thanksgiving or Christmas.

Pumpkin Pie Homemade Pudding Recipe

This Pumpkin Pie Homemade Pudding Recipe will bring you a delicious taste of fall without all the fake ingredients of the boxed stuff!

Prep Time 10 minutes
Cook Time 20 minutes
Additional Time 2 hours
Total Time 2 hours 30 minutes

Ingredients

  • 2 1/2 cups whole milk
  • 1 cup dark brown sugar
  • 1/3 cup corn starch
  • 3 eggs
  • 1 (15 ounce) can of pumpkin puree
  • 3 TBSP butter
  • 1 tsp vanilla
  • 1/4 tsp pumpkin pie spice
  • pinch salt

Instructions

  1. In a large sauce pan combine milk, sugar and corn starch. Whisk until mixed. Cook over medium heat, whisking constantly, until mixture begins to boil and thicken. Cook an addition 2 to 3 minutes.
  2. In a large bowl, whisk the 3 eggs. Slowly add half the milk mixture while whisking continuously.
  3. Pour the egg mixture back into the sauce pan, continuing to whisk until it is well blended. Cook 3 minutes, stirring constantly until thick and bubbly
  4. Remove from heat.
  5. Add pumpkin, butter, vanilla, pumpkin pie spice and salt. Whisk until smooth and completely combined.
  6. Let cool to slightly and then refrigerate until completely chilled 1 to 2 hours.
