Recipe: Peach Chutney

I stocked up on peaches this summer and froze them back for tasty recipes like these that bring a bit of
summer into an otherwise cold and dreary day! Serve this with a nice roasted (or grilled) chicken! Yum!
Peach Chutney



1 tablespoon olive oil
1/2 cup oinion, chopped
3 peaches, peeled and chopped
1/3 cup peach or apricot preserves
1 tablespoon red wine vinegar
1 teaspoon ginger, grated
2 cloves garlic, minced
2 green onions, chopped
1 tablespoon fresh cilantro, finely chopped

Directions:1. Heat oil in skillet
2. Saute onion 3-5 minutes until transluscent.

3. Add garlic, ginger and cumin and saute 1-2 more minutes
4. Add peaches, vinegar, and preserves.
5. Cook 5 minutes.
6. Remove from heat and add green onions and cilantro.
7. Chill several hours until needed or freeze for longer storage
