Recipe: Sausage Cornbread Pie

This is a good, hearty meal that doesn’t take too long to make! If you want to kick up the heat a little bit you can add a can of green chilis or diced jalepenose or some red pepper. Put a cookie sheet or foil under the pan since it can get a little messy with the juice bubbling over!

Sausage Cornbread Pie
Ingredients:

1 pound sausage (bulk, or out of casings)1 cup onion, chopped2 cloves garlic, minced2 cans diced tomatoes (28 ounces total)1 cup frozen corn1 teaspoon chili powder

1 cup cornmeal
2/3 cup flour
1/2 teaspoon salt
2 teaspoons baking powder
2 teaspoons sugar
1 egg, beaten
2/3 cup milk
1/4 cup vegetable oil
1/2 cup cheddar cheese, shredded (optional)

Directions:

1. In a large skillet, brown the sausage. Drain if necessary.
2  Add onion and garlic and cook 3 to 4 minutes

3  Add tomatoes, corn, and chili powder. Simmer 15 minutes. 
4  Spoon mixture into a lightly greased 9 x 9 inch baking dish. ( Do not add all the liquid or you will bubble over!).

5  Mix remaining ingredients except cheese. Add more milk if you need to make a spreadable batter. Spread over the sausage mixture.

6. Bake in a 375 degree oven for 4o minutes or untitl lightly browned. Sprinkle cheese on top in the last 5 minutes or so if desired.
