Would you believe that I did not try my first avocado until I was in my twenties? Seriously! Isn’t that crazy? I grew up in a small town in Connecticut. My parents were not at all that adventurous when it came to food. As wild as we got was a pizza from the local Italian restaurant.
Since I lived an hour outside of New York City, that wasn’t such a crazy thing to eat. When I graduated college, I moved down to Houston. My taste buds were finally awakened to the magic of more exotic cooking. Living in an area that combined the flavors of Mexico with those of Lousiana, I grew to love spicy and flavorful cooking very quickly.
I definitely stock up on avocados weekly now. This shrimp avocado salad recipe was a deliciously light summer salad for lunch today!
Avocados are incredibly healthy and there are SO many ways to incorporate them into your diet. I like to turn them into homemade guacamole and slice them on avocado toast. I frequently toss them into salads and even turn them into smoothies. With the abundance of summer produce in the stores right now, there is no end to the amazing ways that you can include avocados in your daily diet.
So versatile, fresh avocados can be used in any meal or dish. They can be used as a recipe substitute for bad fats, a way to add naturally good fats, a nutrient-dense fruit to add nutrient value, and as a vegan or vegetarian possible alternative to dairy products. Avocado contributes nearly 20 vitamins, minerals, and phytonutrients, making it a good choice to help meet nutrient needs.
Avocados act as a “nutrient booster” by helping the body to better absorb fat-soluble nutrients, such as alpha- and beta-carotene and lutein, from foods that are eaten with the fruit. According to a recent survey from Fresh Avocados – Love One Today®, 53% of consumers are currently dieting, but only 30% are eating several servings of fruits and vegetables daily.
Avocados are incredibly healthy and I love the deliciously creamy texture. Shrimp Avocado Salad Recipe with Cajun Lime Dressing
Shrimp Avocado Salad Recipe with Cajun Lime Dressing
Ingredients
- 1 pound shrimp, cooked, peeled, deveined, and chopped
- 1 1/2 cups chopped cherry tomatoes
- 1 Hass avocado, diced
- 1 jalapeno, seeds removed, diced fine
- 1/2 cup red onion, chopped
- 2 to 3 TBSP fresh cilantro, chopped
- FOR THE DRESSING:
- 2 limes, juice of
- 1 TBSP olive oil
- 1/2 to 1 TBSP cajun seasoning (to taste)
Instructions
- To make the salad:
- Combine the shrimp, onion, cilantro, avocado, tomatoes, and jalapeno in a bowl.
- In a separate small bowl, combine lime juice, olive oil and cajun seasoning. Whisk well.
- Pour the dressing over the salad and toss to mix. Chill 30 minutes or serve immediately.

I make a version of this (non-spicy) for great quick lunches all the time and I LOVE IT! Avocados are a staple around this house, and we’re keen on making guacamole just because. As a matter of fact, I think that I may end up going ahead and making this, this weekend!
