I really love working from home but some days I find myself talking to the dog because it has just been too long since I interacted with other adults. So far the dog has yet to talk back to me, making our interactions rather uninteresting. I remember when I was younger and working in a large research hospital . There were meetings, lab lunches, and break room chats on a regular basis. We got our work done but had plenty of other people to talk to. Now that I work from home I don’t get as much time to socialize and some days I just want to relax with my girlfriends and chitchat for a while. Usually we go out for lunch but then I find myself feeling sluggish and tired all day because I ate way too much queso and a few too many fried appetizers. When I was asked to be a part of the Lean Cuisine Honestly Good campaign I thought this would be a perfect time to have a girls lunch IN that would be a lot healthier than our regular girlfriend lunches. Healthy meals with friends every once in a while make life a lot more enjoyable!

A Healthy Lunch with Lean Cuisine Honestly Good!
Skipping the restaurant meal and having a healthy lunch at home with your friends has a lot of benefits like:
- You can show up at your friend’s house in sweatpants and a scrunchy and she totally understands PMS
- You save a ton of money. Not only is the food itself cheaper but your friend won’t expect a tip for grabbing you a few extra napkins
- The food is a lot healthier so you wont be tempted to skip breakfast just to break even on your daily caloric intake
- You can talk about the most embarrassing things without fear of being overheard by nosy waiters or the kids at the next table.
- Eating at home is WAY better for the environment! You get to choose the quality of the foods you eat and recycle whatever trash you create. (and yes, the carton and plastic tray of the Lean Cuisine Honestly Good meal are both recycleable!)
What did I do to get ready for my healthy lunch date with my friend? A trip to Walmart and a few minutes to whip up a batch of Mint Chocolate Chip macaroons was really all it took. The Lean Cuisine Honestly Good meals can be found in the healthy entree section of your local Walmart’s freezer section. I found it interesting that a lot of the frozen meals said ‘healthy’ but very few actually said NATURAL! Avoiding artificial ingredients is very important to me so this is something I really look for in the food I buy! The price was very reasonable and with the $1.00 off Lean Cuisine coupon I found it was even more affordable. Check out the savings center on the Walmart website to print your own Lean Cuisine coupon! This was definitely a MUCH cheaper meal than going out to a restaurant!
My friend Amy was pretty excited that I was going to show up with lunch for her. I packed up the picnic basket to make transport a bit easier and down the road I went. The menu included homemade sweet tea, chips and guacamole, Lean Cuisine Honestly Good meals (a wide variety so she had a few options to choose from) and of course some homemade cookies for dessert. Another perk about eating a healthy lunch at home? No waiting for a table or sitting there hungry while your food is cooked. I did take a few minutes to point out a some things about the frozen meals we were eating….always happy to share my green and healthy discoveries with friends!

What did we love most about these frozen meals? The fish and chicken are whole pieces of meat, there are fresh, crisp veggies in there that are still vibrantly colorful. The sauce coming in a separate package allowed us to keep our veggies sauceless (my personal preference!) and control how much we added to our meal. The flavors were delicious and afterwards there was no ‘Oh My God I Ate Too Much’ feeling like when you eat out. We got to relax and enjoy ourselves without being rushed by an impatient waiter. We sat for 2 hours chatting about our families, the dog, our crazy hormones or whatever else came to mind. I seriously need to make time to have lunch with friends more often because it seems like we had SO much to catch up on!
I can’t wait to schedule another healthy lunch date with Amy and will definitely be buying a few of these meals to stock in my freezer at home. I’m sure I have a few other friends who would love to have a girls lunch in with me. My girlfriends are WAY more interesting to talk to than the dog!
