What inspired my cocktail creation? I was out watering the garden and herb beds yesterday and realized that my mint is completely taking over the area I put it in. For those of you who grow herbs, you probably understand that if you so much as blink, your mint will spread to where it shouldn’t be.

I have mint growing in the grass because it just cannot be contained with a small rock wall. I love fresh mint and dried back a ton to use in tea this winter but I have been looking for mint recipes to find more ways to use it up. Simple is Better for Watermelon Mojitos!
I checked out a lot of watermelon mojitos on Pinterest while I was brainstorming how to make this cocktail recipe. Some were incredibly complicated. They involved making watermelon simple syrup or pre-freezing cubes of watermelon. Well, they all looked delicious but honestly, I am a rather lazy chef. I decided to make my watermelon mojitos with as few ingredients and steps as necessary! Anything that gets the drink to my mouth a bit faster is good, right? No simple syrups, no frozen watermelon, and very little effort on my part!
How To Choose the Best Watermelon
When choosing the rum for this watermelon mojito with fresh mint, make sure you don’t get a spiced or dark rum. You will overpower the flavor of the watermelon and completely miss the freshness of the mint and lime. Choose a white or light rum (NOT coconut rum. Blech!) for this cocktail recipe.

Easy Watermelon Mojitos with Fresh Mint
Looking for an easy summer cocktail recipe? These watermelon mojitos with fresh mint are sure to be a big hit!
Ingredients
- 3 cups cubed watermelon
- 12 fresh mint sprigs
- 6 tbsp fresh lime juice (1 small lime)
- 2 tbsp granulated sugar
- 6 oz. light rum
- 4 lime slices (for garnish)
- fresh mint sprigs (for garnish)
Instructions
- Place the watermelon cubes in a blender and blend until smooth.
- In a small pitcher, combine fresh mint, sugar, and lime juice. Using the handle of a wooden spoon, muddle the ingredients gently.
- Pour the rum and watermelon puree into the pitcher and stir.
- Fill four glasses with crushed ice and divide the mojito between the glasses.
- Garnish with lime slices and fresh mint
- Serve immediately and enjoy.

I don’t know some coconut rum and watermelon sounds mighty delicious- but probably not with the mojito twist! I bet this is very refreshing on a hot Summer day- and it looks pretty too!
I totally understand the mint overgrowth. We had a fabulous mint garden until two years ago when poison ivy joined in..
We tried pulling it out, but it kept coming back and we were afraid to use the mint for fear of getting the poison ivy oils in our mouths.
