Watermelon Salad Recipe with Basil and Feta

Eating seasonally is something I try to do whenever possible. It is healthier for us, reduces our carbon footprint, and saves a ton of money. It isn’t always possible in the middle of winter but during the peak of summer, finding seasonal and local produce is incredibly easy. On our last trip to Sprouts Farmer’s Market, my daughter grabbed a gigantic watermelon that cost only a few dollars. We were both happy about that and now I have a ton of watermelon to use up this week. This is not particularly difficult in my house. Just leave a watermelon sliced up on the counter and it will disappear in minutes! However, I wanted to try something a little fancier than just gnawing it off the rind. This watermelon salad recipe takes only a few minutes to make and is a delicious summer side dish for your next back yard BBQ.

Watermelon Salad Recipe with Basil and Feta

You can certainly buy your fresh basil at the grocery store but I seriously recommend you grow it yourself. Basil is incredibly easy to grow and almost no pests will bother it. Just stick it in a sunny spot and give it plenty of water and you will have an endless supply of basil throughout the entire summer. I have found that it is very sensitive to cold temperatures so if the  nights will be chilly, cover it up with an old sheet or pillow case. A few tablespoons of fresh basil on this watermelon salad recipe really brings out the flavor of the watermelon! And the combination of salty feta and sweet watermelon is really delicious.

I would recommend making only the amount of this watermelon salad recipe that you think will be eaten at one time. You can cut up extra watermelon but do not add the other ingredients until right before you serve it. This watermelon salad definitely taste best fresh! For a slightly different twist on this salad recipe, serve the watermelon, feta and basil tossed into a bed a leafy greens and drizzle with a balsamic vinaigrette.

  • 4 cups cubed watermelon
  • 1/4 cup feta cheese
  • 2 TBSP thinly sliced fresh basil

Instructions

  1. Place the cubed watermelon in a bowl (1 to 2 cups each, depending on desired serving size)
  2. sprinkle with feta cheese and basil
  3. serve immediately
