Making summer salad recipes is easy to do with an abundance of produce in the grocery store. Eating seasonally is something I try to do whenever possible. It is healthier for us, reduces our carbon footprint, and saves a ton of money.
It isn’t always possible in the middle of winter, however, during the peak of summer, finding seasonal and local produce is incredibly easy.
On our last trip to Sprouts Farmer’s Market, my daughter grabbed a gigantic watermelon that cost only a few dollars. We were both happy about that and now I have a ton of watermelon to use up this week.
This is not particularly difficult in my house. Just leave a ripe watermelon sliced up on the counter and it will disappear in minutes!

Growing Fresh Basil for Salads
You can certainly buy your fresh basil at the grocery store but I seriously recommend you grow it yourself (and if you have too much leftover, use it in my blueberry basil puff pastry tart!).
Basil is incredibly easy to grow and almost no pests will bother it. Just stick it in a sunny spot and give it plenty of water and you will have an endless supply of basil for your summer salads.
I have found that it is very sensitive to cold temperatures. Therefore, if the nights will be chilly, cover it up with an old sheet or plastic garden sheeting.
A few tablespoons of fresh basil on this easy watermelon salad recipe really brings out the flavor of the watermelon! And the combination of salty feta and sweet watermelon is really delicious.
