Homemade pizzas are a great weeknight meal!
Most days I really enjoy being in the kitchen cooking. There’s something relaxing and satisfying about chopping, mixing and simmering. There’s a sense of satisfaction when all of your hard work comes to fruition in the form of a tasty meal to serve your family.
I am forever telling my kids to learn to enjoy the process of cooking as much as the end product. But, then there are days when I just want to get in, get them fed, and get the heck out of the kitchen as quickly as possible. That’s why I always keep a few key ingredients in my pantry for emergencies. A bottle of barbecue sauce can help create an awful lot of meals when you are hungry and in a hurry!

BBQ Chicken Pizza is NOT weird!
I absolutely love California Pizza Kitchen’s barbecue chicken pizza but it is ridiculously expensive to fill up my family on the size pizza in their box. I read the box label last time I was at the grocery store and decided to make it myself with the help of a bottle of Annie’s barbecue sauce.
Yes, I could make barbecue sauce myself from scratch but that defeats the entire concept of ‘dinner in a hurry’ that I was going for tonight. At least it was organic and all natural, right? I had some leftover grilled chicken breast from our weekend cookout and grabbed a couple loaves of French bread from the bakery.

Barbecue Chicken French Bread Pizza
This BBQ chicken French bread pizza recipe is loaded with bold BBQ sauce, cilantro and red onions. It is an easy weeknight meal for families.
Ingredients
- 1 large loaf of French bread pizza, cut in half lengthwise to form 2 long pieces
- 1/3 to 1/2 cup barbecue sauce
- 1/3 cup red onion, sliced thin
- 1 grilled chicken breast, cut into bite sized pieces
- 1/4 cup fresh cilantro, chopped
- 1 8 ounce bag shredded mozzarella cheese (or a combination of cheeses of your choice)
Instructions
- Preheat oven to 500 degrees
- place foil on a cookie sheet for easier cleanup
- place bread open side up on the cookie sheet
- spread the barbecue sauce on the bread
- top with most of the diced chicken, onion, and cilantro
- sprinkle with cheese
- add remaining toppings to the top of the pizza
- bake at 500 degrees for 5 to 10 minutes or until cheese is melted and bread is hot.
- cut into pieces and serve.
