If you are looking for a meatless dinner recipe this month, pasta is a great choice. It’s easy to cook, filling, and something the whole family will love to eat. However, plain old spaghetti sauce gets boring after a while. This creamy spinach pasta sauce recipe uses fresh spinach, coconut milk, and a handful of fresh basil (if you are looking for a more traditional basil pesto recipe, check out my homemade pesto with garden basil instead). Blended with loads of garlic and seasonings, it is an easy homemade pasta sauce that goes great with Cheese Ravioli from Celentano® .

What do you eat on Meatless Monday?
If your family is way too focused on the meat in their dinner, try pasta as a meatless alternative. It’s an easy transition for most families to make and frozen pasta like ravioli is a big hit with my teens.
Celentano pasta is made with only the finest ingredients using only authentic, real Italian recipes. It is frozen at the peak of freshness and easy to cook when you’re ready to prepare them.
Just put frozen pasta directly into boiling water and less than 10 minutes later, they are done! I chose the Celentano Large Round Cheese Ravioli, but they also offer Mini Rounds and Gluten Free varieties.
Healthy Pasta Sauce Ingredients
One thing I love about pasta sauce is that it is so easy to sneak in those veggies! Red sauce uses tomatoes, which are delicious of course. However, this homemade pasta sauce is made with fresh spinach! Loaded with fiber, iron, and loads of Vitamin A and minerals, it is a healthy alternative to traditional pasta sauce.
I used coconut milk for this creamy pasta sauce because it is easy to keep in my pantry. I rarely have half and half in the house, however, if you do, you could use that instead. Adjust the amount of garlic to your taste. This is a blender pasta sauce recipe. Put all the ingredients in the blender and puree. Then, simmer on the stove for about 10 minutes to blend the flavors and thicken the sauce.
The addition of nutmeg and fresh lemon juice in this recipe help to bring out the flavor of the fresh spinach and basil. They give it a depth and brightness that really round out the flavors. Adjust the amount of salt and pepper to taste right before serving. Go light on the salt since the Parmesan cheese is already quite salty.
Green Pasta Sauce Is Easy and Delicious!
So, what is green pasta sauce called? Is it all pesto? Technically you could call pesto a “salsa verde,” since the term just means “green sauce”. Whatever you want to call this sauce, I call it delicious!
I left out the nuts that you normally find in pesto because I wanted it creamy. The addition of cornstarch when you heat the sauce helps it thicken and the coconut milk gives it an amazing creaminess like you would normally find in an Alfredo sauce

Creamy Spinach Pasta Sauce Recipe
This creamy spinach pasta sauce recipe uses lots of fresh spinach and basil. Blended with garlic and seasonings, it's an easy homemade pasta sauce recipe.
Ingredients
- 4 oz fresh spinach
- 1/3 cup fresh basil, packed
- 1 cup light coconut milk
- 1 tbsp corn starch
- 3 cloves garlic
- 1 tsp onion powder
- salt and pepper to taste (about 1/2 tsp each)
- freshly ground nutmeg (about 1/4 tsp or so)
- 1 TBSP lemon juice
- Celentano Cheese Ravioli
Instructions
- Place all ingredients in a blender
- Blend until as smooth as possible (there will be small bits of spinach still there and Parmesan cheese will leave it a bit rough looking.)
- Pour into a medium sauce pan
- Place pan over medium heat and bring to a simmer. Cook about 5 to 10 minutes or until it starts to thicken a bit
- Cook Celentano cheese ravioli according to package directions.
- Drain and rinse ravioli and place on plate
- Top with spinach pasta sauce plus additional Parmesan cheese and fresh basil if desired.
- Cook Celentano Cheese Ravioli according to package directions.

I’m a huge cheesaholic..and there’s absolutely nothing I like better than pasta with cheese.. My fave? Hmm can I say all? I love basic baked mac and cheese. I love my vegetarian lasagna. I love tortellini, beef ravioli. So yeah..all!
My favorite pasta dish is lasagna. When we make lasagna, we usually make it more like a casserole, just using whatever ingredients we have that we want to get rid of. It is a great way to clear our the cupboards. There are times when we use cream of chicken instead of pasta sauce. It makes it a unique dish.
